Ukrainian people start celebrating Christmas when the evening star appears. Families gather for the Christmas Eve supper of 12 meatless dishes which represents the 12 apostles.Afterwards, they sing carols.

On Christmas Day, groups gather to go caroling as they carry the Bethlehem star, which symbolizes the message of Christ's birth. (Written by Harry and Evelyn Kardynal.) The twelve meatless dishes are: Kolach, Kutia, Borscht, Mashed beans, Holubtsi-rice and buckwheat, Perogies, Mushrooms, Jellied Fish, Dried Fruit Compote, Makivnyk and Pompushky.
